10-minute Ginger Lime Noodle Soup

Life opened up for me once I realized we could make really hearty and delicious soups in less than 20 minutes. This one is perfect for your menstrual phase. I came up with this one on a night I was craving something hearty, but didn't want to leave my house, or pay for delivery. I made every single night of my menstrual phase after!

 

Ingredients:

Makes 1 serving

  • 2 c mineral or bone broth
  • 3-4 mushrooms
  • 2 green onions
  • 1 tsp grated ginger
  • 1-2 cloves garlic
  • 1 single serving block noodles like from Momofuuku
  • 1/4 block tofu or shredded chicken 

 

Directions:

  1. Slice mushrooms, grate ginger, and crush the garlic. Chop the onions, and separate the greens and whites.
  2. Add the broth, onions, ginger, and garlic to a pot. Bring to a boil. 
  3. Once boiling, decrease the heat to medium low, and add the noodles, mushrooms, and tofu. Simmer until the noodles are cooked.
  4. If you have a flavor packet, add about 1 tbsp to your bowl. You could exchange that for chili oil or soy sauce. Then, add the contents of the pot, and green parts of onion on top. 

 

I especially love the noodle blocks from Momofuku. They have different flavors so you can choose whatever sounds good to you on the day! I personally love the sweet and spicy flavor, or the soy and scallion flavor. Enjoy! 🫶
