10 Minute Noodle Soup

This is the soup you need when you're on your period and need to eat ASAP. I promise you this will take you no effort, and will leave you completely satisfied. It's packed with menstrual phase benefits, it'll leave your mind and body feeling nourished. 

 

Ingredients:

Makes 1 serving

  • 1 1/2 c mineral broth (or broth of choice)
  • 1/2 c water
  • 1 package ramen noodles
  • 1 stalk green onion
  • 1 clove garlic
  • 1 tsp grated ginger
  • 1 handful chopped kale
  • 2 tsp white miso paste
  • 1 tbsp coconut aminos
  • 1/3 block firm or silken tofu
  • chili crunch oil
  • salt

 

Directions:

  1. Chop green onion, kale, and mince garlic. Chop tofu into bite sized cubes.
  2. Add broth, water, green onion, garlic, coconut aminos, grated ginger, and salt to taste to a pot over medium high heat. Bring to a simmer, decrease the heat to medium low, then cook for 5 more minutes.
  3. In a separate pot, fill with water, boil, and cook noodles according to package.
  4. Add kale, tofu, and miso to your bowl. Add noodles once done, and pour heated broth over. Mix everything to ensure miso paste dissolves. Top with a spoon of chili crunch oil.

 

I made this 3 days in a row on my menstrual phase. Some other great substitutions you could make here include subbing mineral broth for bone broth, kale for spinach, tofu for shredded chicken. You could add mushrooms or add seaweed. So many easy ways to make this yours! Enjoyyy 🫶
