15-Minute Tahini Miso Ramen

Something I can't get enough of is ramen. I look forward to having an excuse to make ramen every menstrual phase. And something I hear you guys appreciate is when a recipe is ready in no time while on your luteal or menstrual phases. This 15-minute ramen gives you that instant gratification while also being healthy. 

 

Ingredients:

Makes one serving

  • 2 c mineral or bone broth
  • 1 tbsp tamari
  • 1 tbsp coconut cream (optional)
  • 1 clove crushed garlic
  • 1 tbsp room temp tahini
  • 1 tsp miso paste
  • 1/4 block of tofu
  • 1/2 c of corn
  • 1 large handful spinach
  • 1 serving noodles
  • pinch of salt

 

Directions:

  1. Bring the broth, tamari, coconut cream, and a pinch of salt to a simmer in a pot over medium high heat.
  2. In the meantime, prepare your toppings: chop the tofu and reheat or cook the corn in the microwave. Add the crushed garlic, miso, and tahini to your serving bowl.
  3. Prepare the noodles in the broth. Remove one ladle of soup and mix with the tahini mixture in the bowl to temper.
  4. Once the noodles are cooked, transfer the noodles and rest of the soup to the serving bowl. Add the rest of your toppings and enjoy.

 

Feel free to add any other toppings you'd like, like an egg, shredded chicken, mushrooms, etc. You can also add some ginger or chili oil for additional flavor. Enjoy!! 🫶
