Do healthy brownies exist? If we're talking brownies that don't contain gluten, dairy, refined sugar, and that have benefits that go beyond tasting delicious, then I think we can call these some healthy brownies. These are PERFECT for when you're on your period or luteal phase. Adaptogens regulate your cycle and mood. Dark chocolate and walnuts contain magnesium to support your body. Maca and/or reishi are best, and ashwaganda too if you don't have PCOS (or any issue with your testosterone).
Ingredients:
Makes ~6 brownies
- 1/3 c almond flour
- 1/4 c + 2 tbsp unsweetened 100% cocoa powder
- 1/2 c coconut sugar
- 1/4 c neutral oil or butter
- 1 egg
- 2 tbsp adaptogens (I used a blend of maca, reishi, and ashwaganda)
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- handful chocolate chips
- handful chopped walnuts (optional)
- dash cinnamon
Directions:
- Preheat oven to 350 degrees.
- Add the coconut sugar and oil to a bowl. Microwave for 30 seconds, mix, and repeat two more times (the sugar won't be melted). Then, add the egg and whisk until everything is well combined and lightened in color.
- Add in the cocoa powder, adaptogens, vanilla, and cinnamon, and mix well.
- In a separate bowl, combine the almond flour, baking powder, and salt. Make sure no clumps of almond flour remain, then fold into the other bowl using a spatula. Fold in chocolate chips and chopped walnuts if using.
- Spread into a bread loaf pan evenly and bake for 15-25 minutes depending on the type of pan you use (ceramic will take longer). Use a knife or toothpick to test for doneness, it's okay if it doesn't come out super clean.
You're absolutely welcome to double this recipe if you want to make a big batch. No shame in that. If you do not want to use almond flour, you can substitute for 3 tbsp regular flour or gluten free flour. I use Hu chocolate chips made with coconut sugar. Enjoy!! 🫶
