You guys are going to DIE over these almond butter bars. They are literally incredible. Aaand they're kinda healthy! Like a healthy dessert. Everything in this recipe is made with anti-inflammatory ingredients, so they're totally gut friendly too. Feel free to change up the toppings, or go none at all. You can make these so many different ways!
Ingredients:
Makes about 12 bars
- 1 1/2 c plain almond butter
- 2 tbsp raw honey
- 1/4 tsp salt
- 3/4 c vanilla protein powder
- 1/3 c melted coconut oil
- 1 c dark chocolate chips (I buy dark chocolate baking chips made with coconut sugar)
- 1/3 c melted coconut oil (again)
- unsweetened coconut shavings
- freeze dried strawberries
- cacao nibs
- shaved almonds
Directions:
- Combine almond butter with coconut oil, honey, salt, and protein powder.
- Line an 8x8 baking dish with parchment paper.
- Pour almond mixture into dish.
- Refrigerate for at least an hour.
- Meanwhile, combine the other 1/3 c coconut oil and chocolate chips together.
- Melt in the microwave in increments of 30 seconds until smooth.
- Get the almond batter out of the refrigerator and pour melted chocolate on top.
- Add any toppings you'd like.
- Refrigerate for another hour at least, 3 hours to overnight is best.
Because the base of these bars are made of coconut oil, expect a little melting. Although, you probably won't have these bars out too long for them to melt 🤣 Don't forget to tag me on IG if you make these!
