Almond Butter Protein Bars

You guys are going to DIE over these almond butter bars. They are literally incredible. Aaand they're kinda healthy! Like a healthy dessert. Everything in this recipe is made with anti-inflammatory ingredients, so they're totally gut friendly too. Feel free to change up the toppings, or go none at all. You can make these so many different ways!

 

Ingredients:

Makes about 12 bars

  • 1 1/2 c plain almond butter
  • 2 tbsp raw honey
  • 1/4 tsp salt
  • 3/4 c vanilla protein powder
  • 1/3 c melted coconut oil
  • 1 c dark chocolate chips (I buy dark chocolate baking chips made with coconut sugar)
  • 1/3 c melted coconut oil (again)
  • unsweetened coconut shavings
  • freeze dried strawberries
  • cacao nibs
  • shaved almonds

 

Directions:

  1. Combine almond butter with coconut oil, honey, salt, and protein powder.
  2. Line an 8x8 baking dish with parchment paper.
  3. Pour almond mixture into dish.
  4. Refrigerate for at least an hour.
  5. Meanwhile, combine the other 1/3 c coconut oil and chocolate chips together.
  6. Melt in the microwave in increments of 30 seconds until smooth.
  7. Get the almond batter out of the refrigerator and pour melted chocolate on top.
  8. Add any toppings you'd like.
  9. Refrigerate for another hour at least, 3 hours to overnight is best.

Because the base of these bars are made of coconut oil, expect a little melting. Although, you probably won't have these bars out too long for them to melt 🤣  Don't forget to tag me on IG if you make these!
