Anti-Bloat Watermelon Salad

This salad is for all my girlies who suffer from bloating and gut issues. We all know how bad it feels to be bloated all the time, and especially in the summer when we're trying to be free in crop tops and shorts. This salad is so refreshing and actually combats bloating šŸ‰ Don't worry too much about the portions of the ingredients, add more watermelon if you want this salad to be primarily a watermelon salad, add more arugula, less mint, etc. Whatever you want!

Ingredients:

Makes about 4 servings

  • 1 small watermelon
  • 6 Perisan cucumbers
  • 5 oz arugula
  • handful of mint
  • 1/4 c olive oil
  • juice of 1/2 lemon or 2 tbsp
  • 1 tbsp dijon mustard
  • 1/2 tsp thyme
  • salt
  • pepper

Directions:

  1. Add arugula to a large mixing bowl.
  2. Chop your watermelon into 1-inch cubes.
  3. Add watermelon to mixing bowl.
  4. Chop Persian cucumbers into slices.
  5. Add cucumbers to mixing bowl
  6. Wash and dry your mint, then add to mixing bowl.
  7. In a separate bowl, mix the olive oil, lemon juice, mustard, thyme, and salt and pepper to taste.
  8. Drizzle over salad.
  9. Mix until well combined.

If you need a little protein in this meal, I recommend a good wild salmon fillet. I do recommend eating this salad the day it's made since the moisture from the watermelon will make the arugula soggy. You're going to be surprised how satisfying this salad is.
