Reminder to EAT your skincare! Good skin starts from within (unless you happen to be one of the lucky ones who can literally eat anything without breaking out)... This soup is rich in vitamin A and beta carotene... which are basically ingestible retinol. It's also a great soup for your luteal phase. If you're one of my meaties, feel free to sub the chickpeas for shredded chicken!
Ingredients:
Makes ~5 servings
- 32 oz broth
- 2 c water
- 2 cans chickpeas (or chicken breast)
- 1 small sweet potato
- 2 stalks celery
- 2 carrots
- 1 leek
- handful kale
- 1 tsp poultry seasoning
- 1 tsp turmeric
- 2 tbsp coconut cream
- salt
- pepper
- oil
- parsley
Directions:
- Drain and rinse chickpeas. Chop celery and leek. Peel and chop carrots and sweet potato.
- Preheat a large pot and once hot add olive oil. Then add the chopped leek, celery, and carrot and sauté for 2 minutes.
- Add the sweet potato, chickpeas, broth, and water and bring to a boil on high heat.
- Decrease heat to medium low. Add the seasoning, turmeric, coconut, and salt and pepper to taste. Let simmer for 10 minutes.
- Add the kale once done simmering. Serve with olive oil and a little chopped parsley if desired.
This soup is so nourishing and easy, I like to think of it as my golden "chicken" soup. Feel free to add noodles if you want to make it "golden chicken noodle soup." Enjoy with a slice of 100% spelt or organic sourdough if you love bread with your soup. Enjoy!!
