Baked Sweet Potato Plate

Okay, so we have a few elements here. But before that, this meal is exactly something I ate while I was healing my gut, and these kinds of plates helped me realize the beauty of whole foods. Prior to my gut health and hormone health journey, I couldn't fathom enjoying a plate of food this healthy 😂 This dish is not only amazing for your gut, it's also super supportive of your luteal phase! There's so much good stuff in this plate, and it's a lot easier to make than meets the eye.

 

Ingredients:

Makes 4 servings

  • 4 red sweet potatoes
  • 4 fillets wild salmon
  • 1 English cucumber
  • 1 pint cherry tomatoes
  • 1/4 c tahini
  • 1 tbsp maple syrup
  • Juice of 1 1/2 lemons
  • 1/4 c minced parsley
  • 3 cloves garlic
  • 1/4 c cold water
  • salt
  • pepper
  • olive oil

 

Directions:

  1. Thoroughly wash and dry sweet potatoes, then prick with a fork all over.
  2. Set oven to 425 degrees and bake sweet potatoes on a baking sheet lined with foil for 50-60 minutes, until easily pierced with a fork. 
  3. Make the tahini sauce by combining tahini, maple syrup, juice of 1 lemon, half of the minced parsley, garlic cloves, and a pinch of salt in a blender or food processor.
  4. Slowly add the cold water until sauce is thick, but still a bit runny.
  5. Prepare your salmon on a baking sheet with a drizzle of olive oil, salt, and pepper on both sides.
  6. Add in the salmon to the oven with the sweet potatoes when there's 12 minutes left on the timer. 
  7. Chop cucumber and cherry tomatoes into quarters.
  8. Add to a separate bowl and squeeze juice of 1/2 lemon, a drizzle of olive oil, and season with salt, pepper, and remainder of the parsley. 
  9. To plate this dish, slice open the cooked sweet potato and gently scramble the insides with a fork. 
  10. Drizzle the tahini sauce over top along with some salt and pepper. 
  11. Serve the salmon beside the sweet potato with some of the veggie mixture over top. 

 

This recipe is so clean, but bursting with flavor! I hope recipes like this inspire you find enjoyment in healthy food as much as they have for me.
