Okay, so we have a few elements here. But before that, this meal is exactly something I ate while I was healing my gut, and these kinds of plates helped me realize the beauty of whole foods. Prior to my gut health and hormone health journey, I couldn't fathom enjoying a plate of food this healthy 😂 This dish is not only amazing for your gut, it's also super supportive of your luteal phase! There's so much good stuff in this plate, and it's a lot easier to make than meets the eye.
Ingredients:
Makes 4 servings
- 4 red sweet potatoes
- 4 fillets wild salmon
- 1 English cucumber
- 1 pint cherry tomatoes
- 1/4 c tahini
- 1 tbsp maple syrup
- Juice of 1 1/2 lemons
- 1/4 c minced parsley
- 3 cloves garlic
- 1/4 c cold water
- salt
- pepper
- olive oil
Directions:
- Thoroughly wash and dry sweet potatoes, then prick with a fork all over.
- Set oven to 425 degrees and bake sweet potatoes on a baking sheet lined with foil for 50-60 minutes, until easily pierced with a fork.
- Make the tahini sauce by combining tahini, maple syrup, juice of 1 lemon, half of the minced parsley, garlic cloves, and a pinch of salt in a blender or food processor.
- Slowly add the cold water until sauce is thick, but still a bit runny.
- Prepare your salmon on a baking sheet with a drizzle of olive oil, salt, and pepper on both sides.
- Add in the salmon to the oven with the sweet potatoes when there's 12 minutes left on the timer.
- Chop cucumber and cherry tomatoes into quarters.
- Add to a separate bowl and squeeze juice of 1/2 lemon, a drizzle of olive oil, and season with salt, pepper, and remainder of the parsley.
- To plate this dish, slice open the cooked sweet potato and gently scramble the insides with a fork.
- Drizzle the tahini sauce over top along with some salt and pepper.
- Serve the salmon beside the sweet potato with some of the veggie mixture over top.
