If there's one thing I love, it's a good side. This is super easy to whip up, and takes less than 15 minutes. All you have to do is pair your favorite side with it, and that's dinner in under 30 minutes. Plus, the green beans and potatoes can be stored, and reheated for later. The whipped feta in this recipe is completely dairy free, and adds such a good tang to the veggies!
Ingredients:
Makes about 4 servings
- 1 6 oz bag green beans
- 1 1/2 c chopped baby potatoes
- 1 6 oz package dairy free feta (normal also works)
- 1/2 c plain coconut yogurt
- 1 tbsp olive oil
- 1 tbsp lemon zest
- salt
- pepper
- 1 tsp paprika
- 1/4 tsp cayenne (optional)
Directions:
- Wash, then cop the potatoes into fourths.
- Heat a hearty drizzle of olive oil over a pan on medium heat then add the potatoes.
- Add salt and pepper to taste, as well as paprika and cayenne.
- Give the potatoes a stir with all the spices and olive oil and let simmer for 3 minutes.
- Wash and trim the green beans.
- Give the potatoes a stir, push to the side, then add your green beans. Make sure all the green beans can touch the pan, add them in batches if needed.
- Let green beans blister for 3 minutes then once all green beans are added, mix the potatoes and green beans together for another 3 minutes before taking the pan off the heat.
- To make the whipped feta, add the yogurt, feta, lemon zest, and a pinch of salt to a food processor or blender.
- Drizzle in a tablespoon of olive oil as it blends until thick and creamy.
- To plate, add a dollop of whipped feta first, then add green beans and potatoes on top.
This side gets freshness from the green beans and whipped feta, but then heartiness from the potatoes. It's flavor is well balanced and would go great with steak, or a white fish in my opinion. Enjoyyy 🫶
