Blistered Green Beans & Herby Potatoes

Just two sides I love to pair together! As a pescatarian, I love to make these two sides ahead of time, and prep whatever fish I want to eat the night of-- usually some wild salmon. But the great thing is chicken, steak, or whatever your protein of choice is also go nicely with these sides. 

 

Ingredients:

Makes about 4 servings

  • 1 12 oz bag green beans
  • 1 24 oz bag baby gold potatoes (basically mini yellow potatoes) 
  • 1/3 c tahini
  • juice of 1 lemon
  • 1/4 c cold water
  • 1 tbsp maple syrup
  • 2 cloves garlic
  • 1 tbsp sesame oil
  • 2 tbsp coconut aminos
  • 1 tbsp rice vinegar
  • salt
  • pepper
  • herbs de provence 
  • red pepper flakes
  • sesame seeds
  • olive oil
  • chili crunch oil

 

Directions:

  1. Wash potatoes thoroughly then coat with a hearty drizzle of olive oil followed by ~2 tsp salt, pepper to taste, ~2 tsp herbs de provence, and ~2 tsp red pepper flakes.
  2. Bake or air fry at 400 degrees for 12-15 minutes until tender. 
  3. While the potatoes are baking, make your tahini sauce by combining tahini, lemon juice, maple syrup, 1 garlic clove, and a hearty pinch of salt in a blender or food processor.
  4. Slowly add your water in while blending, being careful to not add too much. Tahini sauce should not be too watery. 
  5. Heat 1 tbsp olive oil on a pan over medium heat. 
  6. Mix your green bean sauce together, combining the sesame oil, coconut aminos, and rice vinegar.
  7. Mince 1 clove garlic and add to sauce, then set aside.
  8. Wash and trim the ends off the green beans if needed.
  9. Add green beans to the hot pan, and sauté for about 3 minutes, until they begin to brown. 
  10. Remove from the heat and mix green beans with sauce. 
  11. Serve green beans over top a dollop of tahini sauce, and top with sesame seeds and chili crunch oil. 

 

You wouldn't typically think to pair these two foods together, but they just work. Trust me! And of course, you can individually prepare one or the other to your liking. Like I always say, figuring out how to eat healthily all comes down to experimentation. How can you know for sure if you don't try it once?! Hope you enjoy 🫶
