This salad is inspired by the fact that citrus is suuuper in season right now (February as I write this). It's perfect for your follicular phase, when you're feeling a renewed sense of life after your period.
Ingredients:
Makes ~2 servings
- 1 grapefruit
- 2 oranges
- 2 blood oranges
- 1/2 fennel bulb
- 1 large handful basil
- 1 piece burrata
- 1/4 c red wine vinegar
- 1/4 c olive oil
- 1 tsp maple syrup
- flaky salt
Directions:
- Remove peel off all the citrus. Chop the fruit into slices. Thinly slice the fennel.
- Layer the basil, fruits, and fennel.
- Combine the red wine vinegar, olive oil, and maple syrup. Drizzle over the salad. Top the salad with the burrata, and sprinkle flaky salt over top.
If you eat meat, serve this salad with prosciutto. I also like to have this salad with some focaccia. Enjoy! 🫶
