White beans are my absolute favorite bean. I will never not crave them, especially in my luteal phase. This Cajun white bean chili is full of veggies, flavor, and vegetarian protein to keep you full. As you may be able to guess, it's an amazing recipe for your luteal phase, and equally amazing as meal prep. For all my non veggies, feel free to add some Andoullie sausage (to keep with the Cajun spirit), or shredded chicken.
Ingredients:
Makes about 5 servings
- 4 cans Cannelini beans
- 3 c broth
- 1/2 onion (white/yellow/sweet)
- 3 cloves garlic
- 1/2 green bell pepper
- 3 stalks celery
- 1.5 tbsp Cajun seasoning
- olive oil
- salt
- pepper
- cilantro or parsley
Directions:
- Chop the onion, green bell pepper, and celery, and mince the garlic.
- Add olive oil to a large pot over medium heat. Once hot, add the onion, green bell pepper, and celery, and give a quick mix. Then, add the cajun seasoning, and sauté until onions are translucent.
- Drain and rinse 3 cans of beans. Then, add the garlic and sauté for a minute. Add the beans and broth to the pot right after. Bring the pot to a boil. Once boiling, decrease the heat to medium low and simmer for 20 minutes.
- Drain and rinse the last can of beans and add the whole can to a blender. Add a couple ladles of the soup to the blender and give it a rough blend (do not over blend). Transfer the blended beans back to the pot and mix until everything is well combined.
- Season to taste with salt and pepper. Serve with minced cilantro or parsley.
If you'd like to add sausage or chicken, you can add that in at the very end with the salt and pepper, or add it in to the individual bowl when serving. If you love cheese, a little parmesan could go well on the top. Enjoy!! 🫶
