If there's one thing I like to eat for breakfast, it's pancakes. I can eat pancakes pretty much every day (but I don't), but I always try to add a bit more nutritional value to them. Two of the foods that are great for your ovulatory phase are chocolate and berries! That combo is honestly unmatched. These pancakes are made with a serving of chocolate protein plus more chocolate chips, topped with berry compote, and you can add some coconut yogurt on top for a little bit of healthy fat!
Ingredients:
Makes 2 servings
- 2 c oats
- 2 servings chocolate protein powder
- 3 tbsp coconut sugar
- 2 tsp baking powder
- 2 eggs, whisked
- 1 c milk of choice
- splash apple cider vinegar
- chocolate chips
- 1 c strawberries
- 1 c raspberries
- Juice of 1/4 lemon
- 1 tsp cornstarch
- coconut yogurt
Directions:
- Combine milk and apple cider vinegar and set aside.
- Wash berries, chop the strawberries, then add the berries, 1 tbsp coconut sugar, lemon juice, and cornstarch to a pot over medium heat.
- Bring to a hard simmer, reduce the heat to low, then gently mash berries with a fork and let them cook for 5 more minutes.
- Add your oats to a blender and pulse until blended.
- Transfer the oats, remaining coconut sugar, protein powder, and baking powder to a bowl and mix well.
- Add the whisked egg and milk and gently mix until just combined.
- Add about 1/3 c pancake mix to a pan over medium heat with chocolate chips (measure with your 🫶).
- Cook the first side for about 3 minutes, and the second side 1-2 minutes.
- Serve with the berry compote, and coconut yogurt on top.
If you do not have chocolate protein powder, go ahead and use vanilla and add 1 or 2 tablespoons of cacao or cocoa powder. 1 is probably enough for one serving, 2 for 2 servings, or 2 for 1 serving if you like things extraa rich. While this is a sweet breakfast, it's got protein, fiber, and some healthy fats if you add the coconut yogurt, so it's not just a sugar bomb. Enjoy!! 🫶
