I had an idea the other day and thought.. what if I could have a chocolate and normal banana bread in one? And thus the marble banana bread was created. This recipe is derived from my mom's (and my favorite) banana bread recipe. My recipe is just a bit cleaner featuring no gluten or dairy, and minimally processed ingredients (but is just as good). My mom's recipe will be listed at the end of this post for all those who want to try it as well!
Ingredients:
Makes one marble banana bread
- 4.5 very ripe bananas
- 3 eggs
- 3/4 cup melted butter
- 1.5 cup coconut sugar
- 3 cups gluten free oats, blended
- 2 1/4 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- 1 Tbsp cinnamon
- 1/4 c cacao powder
Espresso cream
- 1/2 c vegan ricotta (or cream cheese/yogurt)
- 1 tbsp espresso powder
- 1 tbsp maple syrup
Directions:
- Preheat oven to 350 degrees fahrenheit.
- Mash bananas in a large bowl (or blend in food processor/blender) until smooth.
- Add eggs, melted butter, and sugar into the bowl and mix until combined.
- Blend oats then transfer to bowl.
- Add baking powder, baking soda, and salt and combine.
- Add dry mixture to wet and gently mix with a spatula until just combined.
- Separate the two mixtures out evenly into two bowls.
- Add cinnamon to one bowl, and cacao powder to the other and mix until combined.
- Grease your loaf pan and add the mixes to the pan in whatever formation you'd like. I like to pour each mixture on one side of the pan so there is a clear division between mixes.
- Take a knife, and gently swirl through the mixture to marble (optional).
- Bake for 50-55 minutes.
- For the espresso cream, combine all ingredients with a whisk until combined.
- Add more espresso powder, or maple syrup to your liking.
- Serve banana bread with espresso cream spread on top.
Yum! I'm salivating as I write this 😂 Feel free to omit the cacao powder and just make one regular banana bread following the same recipe if you wish! Mom's recipe below.
Mom's banana bread:
- 3 large bananas
- 2 eggs
- 1/2 cup butter
- 1 1/2 Tbsp buttermilk or sour cream
- 1 tsp fresh lemon juice
- 1 cup sugar
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1 cup chopped walnuts
- 1 Tbsp cinnamon
- Preheat oven at 350 degrees fahrenheit.
- Place bananas, eggs, butter, buttermilk or sour cream, lemon juice and sugar into a large bowl and mix until smooth. Use a food processor if desired.
- Mix together flour, baking powder, baking soda, salt and cinnamon in a separate bowl.
- Pour banana mixture into the flour mixture, stir until flour mixture is moistened. Stir in the nuts.
- Pour the mixture into greased loaf pan.
- Bake the mixture for 55 to 65 minutes or until a skewer comes out clean.
- Allow the bread to cool for at least 5 minutes in the pan.
