This sweet potato recipe can be as healthy or unhealthy as you want it to be. There's also options for serving it. So whether you're enjoying this dish for Thanksgiving, or not, you can tailor the recipe to your wishes!
Ingredients:
Makes ~4 servings
- 2 sweet potatoes
- 2 tbsp maple syrup
- 2 tsp cinnamon
- 1/2 tsp vanilla paste or extract
- pinch of salt
- marshmallows (optional)
Directions:
- Preheat oven to 425 degrees. Prick your sweet potato all over with a fork and bake for 60 minutes. If you have smaller sweet potatoes, bake for 40-50 minutes. You want these potatoes to be very well cooked. Once a fork easily pierces through the middle of the potato, it's done.
- Wait for the potatoes to cool, then cut them in half. Scoop out the filling of each potato and transfer to a bowl.
- Combine the sweet potato with the maple syrup, cinnamon, vanilla, and a small pinch of salt.
- For serving back in their skins, re-fill each skin with the sweet potato mix. Or, add the mix to a small casserole dish.
- Option to top the sweet potato with marshmallows, then broil until marshmallows are brown. Keep your eye on the marshmallows at all time while broiling!
I tried making my own marshmallows, and it was a fail. Until I succeed, I recommend trying Dandies marshmallows. They're a little better than your standard marshmallow as they're made vegan and without corn syrup. Enjoy 🫶
