Before you read this recipe, I want to give credit to Preppy Kitchen's recipe here. This recipe is largely based off of it :) This is not a healthy cake, nor is it a healthier alternative. But I'll tell you it is delicious. I also want to give you the BEST rec for a neutral oil that's healthier than vegetable or canola oil, and dairy free. Algae oil. This brand reached out to me in late 2023 to share their new product with me and ever since I received it, I can't tell you how much I've been loving it.
Ingredients:
Makes two 6-inch cakes
For the cake:
- 1/2 c butter, room temperature
- 1 c sugar
- 3 eggs
- 1 tbsp vanilla extract (use the artificial kind, trust me)
- 1 c almond milk (or milk of choice)
- 2 tsp apple cider vinegar
- 1/4 c neutral oil
- 2 1/4 c all purpose flour
- 1/4 c cornstarch
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 c jimmies (sprinkles)
For the buttercream frosting:
- 1/2 c butter, room temperature
- 2 c powdered sugar
- 1 tsp vanilla extract (artificial)
- 1/4 c heavy whipping cream
Directions:
- Preheat your oven to 350 degrees. Measure out milk and add apple cider vinegar and let sit.
- Mix together flour, cornstarch, baking powder, and salt.
- Cream together butter and sugar. Add the eggs and vanilla extract.
- Gradually add flour mixture and milk alternating the two until everything is just combined.
- Gently fold in the jimmies.
- Divide the batter into two cake pans lined with parchment paper and sprayed with cooking spray.
- Bake for 30-40 minutes.
- Make whipped buttercream frosting by combining all ingredients in a stand mixer, or using a hand mixer.
- Add up to 1/4 c more whipping cream as needed.
- Once cakes have cooled, shave off the domes, and frost as desired.
