This one goes out to the girlies with sensitive tummies. It's super gut friendly, and if you use bone broth, it's SO good for the gut barrier. It's completely gluten and dairy free, yet full of flavor. Perfect for your follicular phase, or anytime you want a cozy bowl of ramen.
Ingredients:
Makes one serving
- 1 c broth of choice
- 1 c gf organic oat milk
- 1 tbsp peanut butter
- 1 block gf ramen noodles
- 1 tbsp tamari
- 1 egg
- 1 big piece broccolini
- baby kale
- tofu or protein of choice
- salt
- chili oil (optional)
Directions:
- Prepare your toppings. Boil the egg for 7 minutes. Season broccolini with oil, a splash of tamari, and salt. Air fry at 325 for 5 minutes or cook on the stove top in your pot at medium heat for ~2 minutes each side. Chop tofu or prepare protein of choice.
- Heat and combine the broth, milk, tamari, and a pinch of salt in your pot over medium heat. Add the peanut butter to your serving bowl.
- Cook the noodles in the broth according to package.
- To serve, temper the peanut butter by combining with a splash of the broth in the bowl first before adding the rest of the broth. Then add your noodles, baby kale, broccolini, egg, and top with chili oil if desired.
If you have leaky gut, IBS, etc, this recipe is perfect for you! If you don't have any gut issues, I highly recommend adding some corn for a little bit of that extra ✨ Feel free to add in any other toppings you'd like, such as green onion and sesame seeds too.
