Ingredients:
Makes 4 servings
- 1/2 green cabbage
- 4 cod fillets sliced in half
- 1/2 c coconut yogurt
- zest of 1 lime
- juice of 2 limes
- 1 c cilantro
- dash maple syrup
- splash water
- 2 large handfuls tortilla chips
- 2 tbsp Old Bay or Trader Joe’s salmon seasoning
- 4 radishes
- salt
- 1 egg
- gluten free flour
- tortillas
- hot honey
Directions:
- Make cilantro lime sauce by combining yogurt, lime zest, lime juice, maple syrup, cilantro, splash water, and a pinch of salt in a blender.
- Chop cabbage into shreds then toss with cilantro lime sauce. Chop radish into thin slices.
- Crush the tortilla chips into breadcrumbs by either smashing them or using a food processor. Combine with the Old Bay or salmon seasoning and a hearty pinch of salt. Lay out the breading on a plate. Lay out flour in a separate plate. Beat the egg in another shallow dish.
- Coat the cod in flour, shake off the excess, dip in the egg, shake off the excess, then finally roll in the breading. Air fry at 400 for 10-12 minutes (flipping half way for best crispiness).
- Heat the tortillas on a pan (if desired) then add the crispy fish first, followed by the cabbage, radish, more cilantro (optional), and finish with a drizzle of hot honey on top.
If you don't like fish, you can try using the same breading with chicken, but adjust the cook time according to the size of the pieces. Cabbage holds up in the fridge pretty well, so you have the option of meal prepping the cabbage, and just cooking the fish fresh once you're ready to eat. Enjoy!! 🫶
