Cucumber and Salmon Poke Bowl

When I'm in my menstrual phase, it's not often I want to spend loads and loads of time cooking. This is a recipe that will literally take you 15 minutes to make (after you've made the rice). And rice really takes 0 effort to make. That's the beauty of a poke bowl, no cooking of the fish needed, and the marinades are SO simple, yet taste full of flavor. Mineral rice replenishes the lost minerals during your menstrual phase, cucumber debloats, and crispy seaweed snacks make this fun to eat, and also have extra minerals!

 

Ingredients:

Makes ~2 servings

  • 1 lb sashimi grade fish (tuna or salmon work best)
  • 1 English cucumber
  • 1 c brown rice
  • 1 1/4 c mineral broth (subs below) AND/OR
  • 1 3x2 inch piece kombu
  • 4 tbsp coconut aminos
  • 4 tbsp ponzu
  • 2 tsp apple cider vinegar
  • 2 tsp rice vinegar
  • salt
  • pickled red onions (optional)
  • sesame seeds
  • pickled ginger

 

Directions:

  1. Wash the rice and add broth or water to your pot or rice cooker. If using a rice cooker, add your kombu (if using) and cook according to rice cooker. If using stovetop method, bring to a boil on high heat, then decrease heat to low, add the kombu (if using), cover, and simmer for at least 25-30 minutes.
  2. Wash, then chop the cucumber into thin slices. Add 2 tbsp coconut aminos, 2 tbsp ponzu, apple cider vinegar, and a pinch of salt to taste and mix to combine.
  3. Chop the sashimi grade fish into bite sized cubes. Add 2 tbsp coconut aminos, 2 tbsp ponzu, rice vinegar, salt to taste, and ~1/4 c pickled red onions and mix to combine everything. 
  4. If the rice is still cooking, place the cucumber and fish back into the fridge to marinate. (marinating not necessary if rice is already done)
  5. Once the rice is done, remove the kombu, and fluff the rice.
  6. Serve the hot rice in a bowl followed by cucumber, poke, pickled ginger, and sesame seeds on top. 

 

I highly recommend having a side of crispy seaweed snacks. You can add rice, cucumber, and poke to each little square, and eat it like a tiny taco. So fun! Instead of mineral broth, you can use bone broth to cook the rice.
