Debloat Peanut Noodles

A girl's gotta eat, but a girl's gotta not get a tummy ache too... That is my motto in life. And this motto has helped me create loads of recipes like this one that taste good but feel good in your body too! You could eat the entire dish if you wanted to. Made with kelp noodles, this noodle dish is your new go-to whenever you need to debloat while eating good. I've added tofu to this recipe, but feel free to sub for any other protein of choice.

 

Ingredients:

Makes ~3 servings

  • 12 oz kelp noodles
  • 2 bok choy
  • 1 carrot
  • 1 tbsp grated ginger
  • 2 green onions
  • 2 heaping tbsp peanut butter
  • 2 tbsp tamari
  • 1/2 tsp rice vinegar
  • 1 tbsp lemon juice
  • 2 tsp baking soda
  • salt
  • toasted sesame oil
  • cilantro (optional)
  • mint (optional)
  • chopped peanuts (optional)

If adding tofu:

  • 1 block extra firm tofu
  • 1 tbsp cornstarch
  • coconut aminos

 

 

Directions:

  1. If adding tofu, press the block for 10 minutes. Chop into chunks and season with a drizzle of coconut aminos, salt, and cornstarch. Air fry for 15 minutes.
  2. Combine the kelp noodles with the lemon juice, and baking soda in a pot and submerge everything in hot water. Loosen the noodles with your hand and let sit for at least 10 minutes before draining and rinsing. 
  3. Shred the carrot, and chop the bok choy and green onions. Separate the green and white part of the onion. 
  4. Mix the peanut butter, tamari, rice vinegar, and ginger together with a splash of water. 
  5. Preheat a pan over medium heat, then add a drizzle of oil. Once hot, add the carrot, bok choy, and white parts of the green onion if using. Add a pinch of salt, then sauté for 3-4 minutes. Then, add the noodles and sauce. Sauté for 2 minutes, then turn off the heat. 
  6. Top each serving with your protein of choice, the green part of the green onions, chopped cilantro, chopped mint, and lastly, chopped peanuts. 

 

I hope you're as obsessed with this recipe as I am! It's now a go-to for my luteal phase, since I get bloated this time every month. Any nut butter like almond or cashew would also work with this recipe. And like I said... no shame if you eat this entire dish, I know I can! Enjoy 🫶
