This is the perfect soup to kick off the new year eating and feeling strong and healthy! It's also perfect for anytime you need to give your system a reset. Made with gluten free stelline pasta, it's also super comforting and warm when you need some coziness in your life. Add shredded chicken for some additional protein if desired!
Ingredients:
Makes ~5 servings
- 6 c broth of choice
- 2 carrots
- 3 stalks celery
- 1/2 onion
- 2 big handfuls kale
- 4 cloves garlic
- 2 bay leaves
- 1 tsp turmeric
- 1 box gluten free stelline pasta
- salt
- pepper
- cayenne (optional)
Directions:
- Peel and chop the carrots, chop celery, onion, and mince garlic. Wash and tear the kale into smaller pieces if necessary.
- In a pot over medium heat, heat up some olive oil. Once hot, add the carrots, celery, and onion. Sauté until onions become translucent, about 2 minutes, then add the garlic and turmeric.
- After 1 minute, add the broth. Bring to a boil, then decrease the heat to medium low, and add the bay leaves, salt, and pepper to taste. Simmer for at least 15-20 minutes. Once done, turn off the heat, remove the bay leaves, and add the kale.
- In the meantime, prepare the pasta according to the package.
- To serve, keep the stelline pasta separate and add a scoop to your bowl with a little olive oil. Add the soup on top, and finish with more pepper and a dash of cayenne on top.
Super simple, and the perfect soup to help reset your body after an indulgent period. If you're vegan or vegetarian, you can add chickpeas or beans for some additional protein instead of chicken as well. Enjoy!! 🫶
