Double Chocolate Chip Adaptogen Cookies

This is not a safe space for chocolate haters... This recipe is gluten, dairy, and refined sugar free! Of course, you can choose to make it with all those things, but these cookies taste literally amazing without all that extra processed stuff. I also had to add adaptogens, because wellness. Stressed out? You can have a cookie, and get your mood regulating adaptogens. It's literally a win-win!

 

Ingredients:

Makes about 22 cookies

  • 1 c + 2 tbsp butter (I used dairy free butter)
  • 1 1/2 c coconut sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 3/4 c all purpose flour (I used gluten free 1:1 all purpose flour)
  • 3/4 c cacao powder
  • 1 tbsp adaptogen powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • chocolate chips (as much as you want! I used unrefined chocolate chips made with coconut sugar)

 

Directions:

  1. Melt butter and mix with cacao powder for a minute. 
  2. Add coconut sugar and mix using a stand mixer or hand mixer for another minute.
  3. Add eggs and vanilla extract and mix until just combined.
  4. Add all dry ingredients and mix until everything is just combined.
  5. Add chocolate chips and use a spatula to fold them in gently.
  6. Scoop cookies onto a baking sheet with parchment paper.
  7. Refrigerate for 15-30 minutes if you want to prevent the cookies from spreading.
  8. Bake at 350 for about 10-13 minutes.
