This is an ovulatory phase breakfast recipe, but of course, can be eaten at anytime! If you know me by now, I love to make everything from scratch, including the english muffins. You are welcome to skip making the english muffins and buy from the grocery store, but my recipe has an additional ovulatory phase benefit since they're made with a bit of cornmeal- corn is one of the best grains during your ovulatory phase. Either way, this recipe is SO delicious, and makes a really quick and easy breakfast on the go once everything is prepped. It will take 2 hours for the english muffins to proof, so make sure you make them ahead of time!
Ingredients:
Makes about 6 english muffins
- 1 1/2 c gluten free flour
- 1/2 c gluten free cornmeal
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 c warm water
- 2 1/4 tsp active dry yeast (or 1 packet)
- 2 tsp coconut sugar
- 1 c mayo
- 1 tbsp dill, parsley, basil, oregano, chives
- 2 eggs
- handful of spinach
Directions:
- To make the english muffins, add warm water to a bowl, along with yeast and coconut sugar. Let sit for 10 minutes
- In the meantime, mix together the flour, cornmeal, baking soda, and salt in a separate bowl.
- Add the warm water mixture to the flour, and mix until well combined, adding more water until you get a thick pancake batter consistency. Mixture should not be watery.
- Cover with plastic wrap, and set oven to proofing setting (if you have it). Let proof for at least 2 hours. I let mine proof overnight.
- Once done proofing, set a pan over medium heat and add cooking spray or a bit of oil to it.
- Spoon 1/3 c of the batter onto the pan once hot. Press down lightly on the batter to form a circle shape.
- Cover, and let cook for 7 minutes. Then flip, cover, and cook another 7 minutes. You may want to decrease the heat to medium low if the muffins cook to quickly.
- To make the herby mayo, wash and chop your herbs.
- Then, mix mayo and all the herbs together.
- Scramble two eggs together until well cooked and in a similar size as the english muffins.
- To assemble your egg sandwich, cut the english muffin in half and toast (if desired).
- Spread a generous amount of mayo on the bottom half of the english muffin, followed by a handful of spinach, then egg, and finish with placing the top half on.
To summarize, the corn, spinach, and chives are great for your ovulatory phase. An additional slice of tomato would be another great ovulatory addition as well! And like I said in the beginning, all you have to do is make the english muffins and mayo once, and then each morning you just have to assemble and make the scrambled egg! Feel free to add a slice of bacon or smoked salmon as well. Salmon is actually full of healthy fats that help you thrive during your ovulatory phase as well.
