Fish Burrito

When I tell you I ate this luteal phase fish burrito every day straight.... I'm shocked I'm not sick of it. This fish burrito has all the luteal phase benefits: cod, red cabbage, and brown rice are all great during this phase! I wrapped this whole thing up with a spinach wrap and omg it is so yummy. It's surprisingly easy to make, yet will look like you got it from a restaurant!

 

Ingredients:

Makes 4 burritos

  • 4 fillets cod (completely defrosted)
  • 1/4 red cabbage
  • 1 c brown rice
  • 1 can black beans
  • 1 avocado
  • 4 burrito sized wraps
  • 1 tbsp cilantro
  • juice of 1/2 lime
  • zest of 1/2 lime
  • dash of cayenne
  • Trader Joe's salmon seasoning
  • salt
  • olive oil
  • chipotle mayo

 

Directions:

  1. Preheat your oven to 400 degrees.
  2. Prepare your brown rice with just over 1 c of water. If using a rice cooker, cook according to instructions. If using stovetop method, bring slightly more than 1 c of water and rice to a boil over high heat, then reduce to low, cover and let simmer for 25-30 minutes. 
  3. Add your cod to a baking sheet and drizzle with olive oil. Season each side with the seasoning, a dash of cayenne, and pinch of salt. Bake or air fry for 8-9 minutes.
  4. In the meantime, chop your red cabbage into shreds.
  5. Drain and rinse your black beans, dry, then toss with a pinch of salt.
  6. Slice your avocado into thin slices. 
  7. Wash, then chop your cilantro, removing the stems. Add the cilantro to the cooked rice along with the lime juice and zest and mix to combine. 
  8. Lay your tortilla or wrap on a cutting board. Add a rectangle of rice about 1/4 inch thick. Add a layer of beans next, followed by cabbage, and avocado slices. Add chipotle mayo on top of the avocado.
  9. Lastly, add the fish on top of the chipotle mayo and roll the wrap into a burrito.
  10. To seal the burrito, heat a bit of olive oil on a pan over medium or medium low heat and cook for 2 minutes with the seal side down.

This burrito would also go great with chicken or steak! Pick your poison. I like to add a little hot sauce to each bite, salsa, or nothing additional would also work. Now if you'll excuse me, I'm going to go make myself yet another one of these burritos... Seriously they're so good 😩 Enjoyyyy!
