Flaky French Toast

Listen... I'm no Kardashian-Jenner-mega-supporter, but if there's one thing I will support, it's Kylie Jenner's food choices. And this flaky french toast she posted way back when is truly one of those recipes I wish I had tried sooner! In typical me fashion, my recipe is gluten and dairy free, but you can easily make this with any type of ingredient you want. 

 

Ingredients:

Makes 3 slices of french toast

  • 3 slices bread of choice
  • 1 egg
  • 1/4 c almond milk
  • 1/2 tsp cinnamon
  • 1 c gluten-free cornflakes or any flaky cereal
  • coconut whipped topping (optional)
  • maple syrup 
  • 1 tbsp dairy-free butter

 

Directions:

  1. Beat the egg, milk, and cinnamon together until well combined.
  2. Transfer the cornflakes to a ziplock baggie and crush with a rolling pin until the cornflakes are about 1/8-1/4 of their original size.
  3. Transfer the cornflakes to a plate.
  4. Grab your sliced bread and submerge in the egg mixture on both sides for a few seconds.
  5. Using tongs, place one side of the bread into the cornflakes, pressing to stick the cornflakes to the bread, then do the same for the opposite side. Repeat for all slices of bread.
  6. Add a tablespoon of butter to your pan at medium heat.
  7. Once the butter has melted, add your french toast to the pan. Cook on one side for a few minutes then switch sides.
  8. Plate with a dollop of coconut whipped topping and a generous drizzle of maple syrup. 

 

The coconut whipped topping is optional but really elevates this french toast to the next level. I can't go without it on french toast and pancakes. Add some berries like strawberries or blueberries if you want to take it up another notch! These are best served fresh 🫶
