I came across a version of this French detox soup from an American woman living in France. Her MIL is French, and makes this soup weekly. I think we can all take a page out of the French people's book. They definitely know something about balance and moderation. This is the soup you eat after a weekend of croissants and wine. You eat it with a slice of fresh bread, of course, because the French don't believe in cutting carbs. Neither do I!
Ingredients:
Makes ~4 servings
- 1 Yukon gold potato
- 3 leeks
- 2 onions (I used 1 sweet & 1 white)
- 2 carrots
- 3 cloves garlic
- Juice of 1/2 lemon
- handful of parsley
- 1 tsp thyme
- 6 c chicken broth or chicken bone broth
- salt
- olive oil
- crusty bread
Directions:
- Chop all your vegetables. Make sure to chop into small pieces and peel the carrots before chopping.
- Heat a large pot over medium heat and add a good drizzle of olive oil. Once hot, add the chopped leek, onion, carrot, and potato. Sauté for 3 minutes.
- Add the chicken broth. Then add the parsley without the stems, thyme, garlic cloves, and lemon juice. Bring to a boil, then let everything simmer for 10 minutes on medium heat.
- Turn down the heat to low and blend everything with an immersion blender or by transferring to a separate blender. Add back to the pot and salt to taste.
- Serve with a drizzle of olive oil on top and more parsley. Make sure to have a good slice of crusty bread for dipping.
This soup would be best eaten after a weekend of enjoyment, or in your luteal phase! For some extra protein, add a side of your favorite fish or chicken. Enjoy! 🫶
