This is one of the easiest ways to cook Miracle noodles and have them taste GOOD! Pair it with roasted Japanese sweet potato and my ginger scallion salmon recipe to create my favorite Erewhon combo plate from home. Perfect for the luteal phase. This recipe is part of my Cycle Syncing Essentials meal plan.
Ingredients:
Makes 2-4 servings
- 3 cloves garlic
- 2 packages Miracle noodles
- 1/3 c coconut aminos
- 1/4 c green onion
- 1/4 tsp cornstarch
- salt
- oil
Directions:
- Slice 2 cloves of the garlic, and crush the third. Chop the green onion. Drain and rinse noodles.
- Add a good splash of oil to a pan over medium heat. Once hot, add the sliced garlic, and sauté until fragrant, about 1 minute.
- Add the coconut aminos and cornstarch dissolved in a splash of water.
- Once the sauce has slightly thickened, add the noodles and salt to taste. Toss everything until the noodles have all turned color. Let simmer for 5 minutes.
- Add the green onion, mix, and let everything simmer for another 5 minutes.
Feel free to add tofu, or your protein of choice if you want to eat the noodles on their own. One package plus a protein is usually enough for one meal for me. Enjoy 🫶
