I love this salmon recipe since it's super simple, and doesn't require any measuring at all. This is the protein part of my favorite Erewhon combo plate at home. Pair it with my garlic Miracle noodles and roasted sweet potato for the perfect luteal phase dinner.
Ingredients:
Makes 4 servings
- 4 salmon fillets
- 1 2-inch chunk ginger
- 4 green onions/scallions
- coconut aminos
- rice vinegar
- oil
- salt
Directions:
- Preheat oven to 400 degrees.
- Peel and chop the ginger into thin slices. Chop the green onion, separating the whites and the greens.
- Drizzle coconut aminos and rice vinegar over the salmon fillets. You can just eye ball it. Then drizzle your oil of choice over top, patting it in.
- Distribute the ginger slices on top of all the fillets. Then, sprinkle the white parts of the green onion on top of each fillet.
- Bake for 10-12 minutes. Top with the remaining green onion afterwards if desired.
If you don't have rice vinegar, mirin, shaoxing wine, or ponzu could work as well. Enjoy 🫶
