I could eat this cheesecake for daysssss. It's SO easy. You're going to want to make this recipe every weekend it's so good! This plain cheesecake is light, refreshing, and top with any kind of berries, and you're good to go.
Ingredients:
Makes one cheesecake
- 1 box gluten free graham crackers
- 4 tbsp dairy free butter
- 16 oz dairy free cream cheese
- 2/3 c sugar
- 1 tbsp cornstarch
- 3 tbsp milk of choice
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Directions:
- Crush your graham crackers in a ziplog bag using a rolling pin.
- Melt your butter in a medium sized bowl, and add the graham crackers.
- Mix until combined, then transfer to your pie tin.
- Mold the graham cracker mixture to the pie tin.
- Bake for 10 minutes at 350 degrees.
- Next, beat the cream cheese and sugar together until smooth.
- Add in cornstarch, milk, lemon juice, and vanilla, and mix until smooth.
- Transfer cheesecake mixture to pie crust and bake for 40 minutes at 350 degrees.
- You can remove the cheesecake once it is slightly wobbly.
- Refrigerate at least 4 hours, or overnight.
My recommendation- top your cheesecake with some strawberries, strawberry compote, strawberry jam... Or just eat it plain! It's so delicious on its own. I could eat the whole thing in one sitting honestly. DM me if you make this besties 🫶
