I recently discovered the beauty of udon noodles... and I'm so hooked! Udon noodles are typically made with wheat flour, but there are gluten free options that are honestly a game changer. Stir fry noodles are easy, quick, and honestly so flexible! You can add or subtract ingredients as you'd like.
Ingredients:
Makes about 3-4 servings
- 1 8 oz package GF udon noodles
- 1/4 green cabbage
- 3 green onions
- 3 cloves garlic (decrease/omit if you are following a low-FODMAP diet)
- 2 tbsp sesame oil
- 3/4 c coconut aminos
- 2 tbsp maple syrup
- sesame seeds
Directions:
- Cook udon noodles according to package.
- Slice your cabbage into shreds.
- Heat up 1 tbsp sesame oil on your pan at medium-high heat.
- Add your cabbage and sauté for 3 minutes until cabbage begins to char.
- Mince garlic and add to pan, allow to cook for 1 minute.
- Slice green onion and add to the pan (you may want to omit the white part if you are following a low-FODMAP diet).
- Add your cooked noodles, then add 1 tbsp sesame oil, coconut aminos, and maple syrup.
- Gently mix together until everything is well combined.
- Top with your protein of choice, and sesame seeds.
That's it! So simple, yet so full of flavor. If you are not on a low-FODMAP diet, and want to kick this recipe up just a notch more, add some sliced shallots- one or two depending on the size.
