Healing Mineral Soup

This is the soup I needed during my period. During your menstrual phase, you want to focus on soups, stews, and replenishing the lost minerals and iron. This healing mineral soup feels like a warm hug for your uterus ✨ Have this soup as a light snack or accompanying the rest of your lunch or dinner!

 

Ingredients:

Makes about 3 servings

  • 4-5 shiitake mushrooms
  • 2 stalks celery
  • 1 clove garlic
  • 1 package thin rice noodles
  • 1 package soft tofu
  • olive oil

 

Directions:

  1. Mince garlic, and chop mushrooms and celery into slices.
  2. Heat olive oil over medium heat in a pot, then add the chopped vegetables.
  3. Let the veggies cook down for 10 minutes, then add your broth.
  4. Raise the heat to medium high and bring everything to a boil. 
  5. Once boiling, reduce heat to low, cover, and let simmer for 10 minutes.
  6. In the meantime, prepare your tofu by chopping into small cubes.
  7. Then, prepare rice noodles according to the package. 
  8. To serve, add rice noodles and tofu to a bowl, then ladle the hot soup on top. 

 

This is a very light soup, and the mineral broth is packed with flavor so I don't typically add spices. If you need, you can add a pinch of salt. This recipe also works if you don't want to add the noodles, and just add tofu, and vice versa. It's packed with all the nutrients you most need during your period, and when your body needs rest, sometimes a simple soup is the best! Enjoy 🫶
