Healthier Salted Caramel Cookie Skillet

The holidays are here... and baking season is here. The holidays are meant for enjoying food! But that doesn't mean you have to sacrifice your health for enjoyment every time. This salted caramel cookie skillet is completely dairy, gluten, and refined sugar free-- even the caramel! It's sweet, but not too sweet. I'm obsessed.

 

Ingredients:

Makes one cookie skillet

  • 3 c gf oats
  • 2 bananas
  • 1 tsp vanilla extract 
  • 2 eggs
  • 1/2 c milk of choice
  • 1/3 c + 1 tbsp coconut sugar
  • 1 tsp baking powder
  • pinch of salt
  • refined sugar free chocolate chips
  • 1/4 c maple syrup
  • 3 tbsp coconut cream (cream only)
  • 1 tbsp coconut oil
  • 1 tbsp df butter
  • flaky salt

 

Directions:

  1. Preheat oven to 375 degrees.
  2. Blend oats in blender until oat flour is created.
  3. Mash two bananas then add to a bowl with vanilla extract, milk, and eggs and mix well.
  4. Then add the oat flour, 1/3 c coconut sugar, baking powder, pinch of salt, and mix until just combined.
  5. Add as many chocolate chips as you want (I did about 1 c) and fold in gently with a spatula.
  6. Transfer to a baking dish (9 or 12 inch) with cooking spray, top with more chocolate chips, and bake for 15-25 minutes (baking will differ based on the size of dish you use. I used 9 inch so it was closer to 25 minutes).
  7. In the meantime, to make your caramel, add maple syrup, butter, coconut cream, and a pinch of salt to a pot over medium high heat, stirring until mixture starts to bubble.
  8. Turn down to low and let simmer for 10 minutes, stirring occasionally.
  9. Once you see the mixture start to thicken, turn off the heat, add coconut oil and a splash of vanilla extract, and stir continuously for another few minutes.
  10. Once the cookie skillet is out of the oven, let cool for ~10 minutes, then add caramel, and flaky sea salt on top while the chocolate chips are still a bit melty on top. 

 

I was introduced to the kitchen through baking, so making recipes like these truly warms my soul. It gives me so much pleasure to be able to make baking a little healthier but just as tasty.
