Healthy-ish Banana Bread

This recipe is near and dear to my heart since it was originally my mama's recipe! I've edited and refined it a bit to be a littleeee healthier, but it still has it's original sparkle ✨ This is my go-to thing I make whenever I'm needing to feel a sense of self-care in the form of food. 

 

Ingredients:

Makes one loaf

  • 2 very ripe bananas
  • 2 eggs
  • 1/3 neutral oil (I used this one) or butter
  • 1 tsp vanilla extract
  • 1 heaping tbsp yogurt
  • 1 tsp apple cider vinegar
  • 1 c date sugar or coconut sugar
  • 2 c flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt
  • cinnamon
  • more banana for topping
  • almond butter
  • cacao nibs

 

Directions:

  1. Preheat oven to 350 degrees. 
  2. Mash bananas then combine with eggs, oil, vanilla extract, yogurt, apple cider vinegar, and sugar. Whisk very well.
  3. Add the flour, baking powder, baking soda, salt, and cinnamon and mix until just combined using a spatula.
  4. Transfer batter to a loaf pan lined with parchment paper. Bake for 55 minutes or until a toothpick comes out clean. 
  5. Spread almond butter on top of a slice, followed by slices of banana, and cacao nibs on top. 

 

If you wanna get extra fancy, add some edible dried flowers on top. It's the little things! Banana is also great for your luteal phase so try this recipe anytime you're in this phase too. Enjoy 🫶
