Yes, it's okay to have a Twix once in a while. But with these healthy "Twix" bars, you can really feel guilt-free about having one every day! These healthy "Twix" bars are made with nut flour, no refined sugar, and a little boost of collagen. They're my newest addiction when I want something sweet but don't want to eat something loaded with refined sugar.
Ingredients:
Makes about 8 bars
- 1/2 c nut flour or almond flour
- 1 serving unflavored or vanilla collagen
- 1/8 tsp salt
- 1/8 tsp baking soda
- 2 tbsp maple syrup
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract (if using unflavored collagen, omit if you're using vanilla collagen)
- 5 pitted dates
- 1/4 c almond milk
- 1 tsp vanilla extract (again)
- 1 c refined sugar free chocolate
Directions:
- Add your pitted dates to a bowl of warm water and let soak.
- Mix together your flour, collagen, salt, baking soda, maple syrup, coconut oil, and vanilla extract (if using). The dough should be easily able to be molded together. If it's still too crumbly, add 1 tsp of maple syrup or coconut oil more until it comes together easily.
- Add parchment paper to your baking tray.
- Shape the dough into Twix shaped bars, about 2 inches long, 1/2 inch wide, placing onto the baking tray.
- Let the Twix bars rest in the freezer for about 10 minutes and in the meantime preheat your oven to 325 degrees.
- Bake the Twix bars for 15 minutes.
- In the meantime, drain your dates and add to a blender or food processor (a food processor is better for this, but I used a blender and it worked out fine).
- Add the almond milk, and last tsp of vanilla extract and blend until completely smooth.
- Once your Twix bars have cooled for at least 10 minutes, add a large dollop of the date caramel on top of each bar.
- Add the Twix bars back into the freezer for at least an hour.
- Melt the chocolate by adding to the microwave for 30 seconds to start, mixing, then microwaving for another 15-30 seconds. Do not over-microwave. The solid chocolate will melt by you mixing it with the melted chocolate.
- Get your Twix bars out of the freezer and one by one add them to the bowl of melted chocolate, and cover with the chocolate.
- Place back into the refrigerator to set for 15 minutes and then enjoy.
You can either store the Twix bars in the refrigerator or freezer. I personally prefer the refrigerator. Also, if you don't want to add collagen to this recipe, remove 1 tbsp of maple syrup and coconut oil from the initial mix. If you want to jazz these Twix bars up a little more, add some flaky sea salt before the chocolate sets while you're covering them. I hope you like this recipe, let me know if you make it! 🫶
