Hormone Healthy Tomato Soup and Grilled Cheese

Made with better-for-your-hormones ingredients, this tomato soup is ACTUALLY healthy, and totally guilt and stress free. Dairy free cashew cheese, sourdough bread and vegan pesto make the grilled cheese absolutely delicious. Shop small and go get yourself a farmer's market sourdough- these usually have the least "extra" ingredients. Tomato soup is simple and made with cashew milk. It's just like from the restaurant but 5x better. 

 

Ingredients:

Makes 4 servings

  • 1 28 oz can whole peeled San Marzano tomatoes
  • 4 Roma tomatoes
  • 1 sweet onion
  • 1 head garlic
  • 4 sprigs fresh thyme
  • 1/2 c water
  • 1/2-1 c cashew milk
  • 1/8 tsp baking soda
  • salt
  • pepper
  • olive oil
  • sourdough bread
  • cashew mozzarella
  • vegan pesto 
  • avocado oil mayo

 

Directions:

  1. Preheat oven to 425 degrees.
  2. Chop the tomatoes and onion into quarters. Chop the top of the garlic off so all of the bulbs are exposed. Add the veggies to a large baking sheet and drizzle with olive oil and season with the thyme, and salt and pepper. Let roast for 30 minutes. Roast garlic for additional 10 minutes if possible.
  3. In the meantime, make your pesto (if making fresh).
  4. Let the veggies cool slightly then blend along with San Marzano tomatoes can, cashew milk, water, and baking soda until liquified in a blender. Or, transfer all ingredients to a pot and blend using an immersion blender. Start with less cashew milk, and add more as desired. 
  5. Transfer the soup to a pot over low heat. Add more salt to taste and let the soup's flavors meld for at least 5 minutes.
  6. Make your grilled cheese in the meantime. Spread a little avocado oil mayo or cashew butter on your bread for toasting on the stovetop. Add cashew mozzarella and pesto on the inside. Serve immediately with the soup.

 

Some additional tid bits you can add to this recipe: pesto in the tomato soup, prosciutto in the grilled cheese, nutritional yeast in the soup, chicken in the grilled cheese... so many possibilities.
