Jicama Fish Tacos

Instead of a regular tortilla, we're using jicama instead. But don't be scared! Jicama has barely any taste. They're crunchy, refreshing, and super healthy. I prefer cod for fish tacos, but any white fish would work really well.

Also- I cooked my fish in the air fryer, but you can easily cook them any other way. I love my air fryer as it's the easiest and fastest way to cook anything.

 

Ingredients:

Makes 4 tacos

  • jicama tortillas
  • 2 cod fillets
  • olive oil
  • chili powder
  • smoked paprika
  • onion powder
  • salt
  • pepper
  • 1/2 avocado
  • 1/4 red cabbage shredded
  • chipotle mayo
  • handful chopped cilantro
  • 1 lime cut into fourths

 

Directions:

  1. Grab your cod fillets and cut them in half length wise.
  2. Drizzle them with olive oil.
  3. Coat them with chili powder, smoked paprika, onion powder, and add salt and pepper to taste. Just coat each fillet until they're covered by a light layer of each spice.
  4. Cook the fillets in the air fryer at 400 for 10-12 minutes.
  5. Meanwhile, chop up 1/4 of a red cabbage into shreds.
  6. Chop up a handful of cilantro.
  7. Take your 1/2 avocado and chop into slices.
  8. Grab your precut jicama tortillas and lay them down on plates. I like to layer two jicama tortillas per taco.
  9. Add your cabbage at the bottom, then fish on top.
  10. Spread a little chipotle mayo on top of the fish, and add some avocado beside the fish.
  11. Sprinkle each taco with cilantro and a squeeze of lime.
