Kale Caesar with Crispy Chickpeas

This recipe is inspired from the one and only Hailey Bieber! Happened to see that Hailey said she loves a good kale Caesar salad with no croutons and I wanted to recreate my own. Crispy chickpeas are the perfect sub for croutons. Kale is so much more nutritious and delicious in my opinion than Romaine lettuce so this is honestly my perfect Caesar! 

 

Ingredients:

Makes 2 Caesar salads

  • 1 small bag of kale 
  • 1/2 c mayo
  • 1-2 cloves crushed garlic
  • Juice of 1/2 lemon
  • 1/2 tsp Worcestershire sauce
  • salt and pepper to taste 
  • 1 can chickpeas
  • 2 tsp garlic powder
  • 1 tbsp nutritional yeast
  • more lemon for garnish

 

Directions:

  1. Divide the small bag of kale up into 2 bowls.
  2. With clean hands, massage kale by scrunching it up in your hands and releasing until kale is slightly wilted.
  3. Drain chickpeas and dry.
  4. To a separate bowl, add your chickpeas, olive oil, garlic powder, nutritional yeast, and salt and pepper to taste and toss until combined.
  5. Air fry at 400 degrees for about 12 minutes. If using an oven, bake at 400 degrees for about 15-20 minutes.
  6. Make your dressing by combining mayo, lemon juice, Worcestershire sauce, garlic, and salt and pepper. Add a splash of water if it’s too thick. Dressing should be runny, but not watery.
  7. Drizzle dressing over kale. Add another squeeze of a lemon wedge on top if you like extra lemon. 
  8. Add your chickpeas on top. 

 

If you like lemon as much as I do, you’re going to love this dressing. Feel free to add a side of chicken or salmon if you want a little extra protein too! Super easy and refreshing salad- especially in the summer. Let me know if you make it 🫶
