Kelp Noodle Cabbage Salad

Cabbage salads are honestly the salad of my summer this year, so when I tried Erewhon's kelp noodle salad at their hot bar, I had to recreate it ASAP! Cabbage is one of my favorite cruciferous veggies EVER and so great for your hormones. You can make this recipe easier by buying shredded cabbage and carrots, and buy any sort of almond butter dressing from the store, but I encourage you to make it at home! It's easier than you think ☺️

 

Ingredients:

Makes about 4 salads

  • 1/2 green cabbage
  • 1/2 red cabbage
  • 2 c shredded carrots
  • 4 green onions
  • 1 bag sugar snap peas
  • 1 bag kelp noodles
  • 3 tbsp almond butter (peanut or cashew also work)
  • 3 tbsp coconut aminos
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves crushed garlic
  • 2 tsp honey
  • 1 tsp red pepper flakes (optional)
  • sesame seeds

 

Directions:

  1. Prepare kelp noodles according to package.
  2. Chop your green and red cabbage into shreds.
  3. Dice green onion.
  4. Separate the kelp noodles from each other to break up the large clump.
  5. In a large bowl, add the cabbage, carrots, 1 or 2 handfuls of snap peas, 2 handfuls of kelp noodles, and onions.
  6. In a separate bowl, mix together your nut butter, coconut aminos, rice vinegar, sesame oil, garlic, honey, and red pepper flakes until everything comes together.
  7. Add dressing to cabbage mixture and mix well.
  8. To serve, add sesame seeds and protein of choice on top.

 

Salmon, shrimp, tofu, or chicken work well for this recipe. If you prefer, you can also leave the kelp noodles out until serving and serve them on top of the cabbage mixture. For a hormone balancing, refreshing, and well-balanced salad, this one is definitely your go-to! Hope you love it besties 🫶
