Kimchi Fried Rice

For me, trying kimchi was a bit of an intimidating experience. I'm not used to Korean flavors, but after watching my brother make some fried rice with it, something just flipped. Trying kimchi through fried rice is such a great way for kimchi beginners to get acquainted with it!

 

Ingredients:

Makes 1 serving

  • 1 c rice 
  • 1/4 c chopped kimchi
  • 1 tsp hot chili paste (sriracha, kimchi paste, or gochujang work best)
  • 1 chopped green onion (greens only)
  • 1 tbsp sesame oil 
  • 1 egg
  • sesame seeds

 

Directions:

  1. Cook rice and set aside. Old rice works as well.
  2. Roughly chop your kimchi, and heat a pan over medium heat with sesame oil.
  3. Add the kimchi and chili paste and stir fry for about a minute.
  4. Add the rice, a splash of water, and fry together for about 3 minutes.
  5. Remove the rice and set aside. Fry an egg over top the same pan.
  6. Chop your green onion.
  7. Top the rice with egg, green onion, and sesame seeds. 

 

Super easy! kimchi has this rich flavor that is soo good. Feel free to double or triple this recipe if you want to make it ahead of time and meal prep for the rest of the week. Enjoyyy 🫶
