This better-for-you pancake recipe is packed with protein so you still get some nutritional benefit out of them. They have a beautiful balance of lemon and blueberry for that summer vibe, and you can't even taste the protein powder! So good you would never know these are functional pancakes.
Ingredients:
Makes one serving
- 1/2 c gluten-free all purpose flour or oat flour
- 1 serving vanilla protein powder
- 1 egg
- 1 tbsp oil (I prefer coconut)
- 1 tsp baking powder
- 3/4 c milk of choice
- 2 tsp lemon zest
- vanilla yogurt or coconut whipped topping
- blueberries
Directions:
- If using oat flour, add to blender and pulse until it’s in powder form.
Mix dry ingredients together in a large bowl. - Add wet ingredients and gently whisk until just combined.
- Add lemon zest and gently whisk in.
- Cook pancakes on stovetop with some coconut oil on the pan (or you can use whatever you want).
- Top with vanilla yogurt or whipped topping, blueberries, and more lemon zest.
