Lemon Blueberry Protein Pancakes

This better-for-you pancake recipe is packed with protein so you still get some nutritional benefit out of them. They have a beautiful balance of lemon and blueberry for that summer vibe, and you can't even taste the protein powder! So good you would never know these are functional pancakes.

 

Ingredients:

Makes one serving

  • 1/2 c gluten-free all purpose flour or oat flour
  • 1 serving vanilla protein powder
  • 1 egg
  • 1 tbsp oil (I prefer coconut) 
  • 1 tsp baking powder
  • 3/4 c milk of choice
  • 2 tsp lemon zest 
  • vanilla yogurt or coconut whipped topping
  • blueberries

 

Directions:

  1. If using oat flour, add to blender and pulse until it’s in powder form.
    Mix dry ingredients together in a large bowl.
  2. Add wet ingredients and gently whisk until just combined.
  3. Add lemon zest and gently whisk in.
  4. Cook pancakes on stovetop with some coconut oil on the pan (or you can use whatever you want).
  5. Top with vanilla yogurt or whipped topping, blueberries, and more lemon zest.
