Mexican Inspired Caesar Salad

Sometimes you just get bored of the same Caesar salad all day... This Mexican inspired version of your classic Caesar still has the main elements: creamy Caesar dressing, Romaine lettuce, and "croutons." It's the perfect salad while in your follicular phase, or when you just want to jazz up a plain Caesar salad a bit!

 

Ingredients:

Makes ~3 servings

  • 1 head Romaine lettuce
  • 2 ears sweet corn
  • 1 can chickpeas
  • 15 shrimp
  • 2-3 cloves garlic
  • 1/2 c mayo 
  • 1/4 c lemon juice
  • 1/2 tsp Worcestershire sauce
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 1 tsp chipotle powder
  • 1/4 c pumpkin seeds
  • salt
  • pepper
  • oil
  • avocado

 

Directions:

  1. Prepare the chickpea croutons by draining and rinsing. Then pat dry and season with 1 tbsp oil, 1 tsp smoked paprika, 1 tsp cumin, 1/2 tsp chipotle powder, and salt to taste. Air fry at 400 for 12-15 minutes.
  2. Wet a couple paper towels and wrap your corn in them. Microwave for 4 minutes. Let the corn cool for at least 5 minutes.
  3. Make your dressing by combining mayo, garlic cloves, lemon juice, Worcestershire sauce, a splash of water, and salt and pepper to taste in a blender.
  4. Chop the lettuce, then rinse thoroughly. Use a salad spinner or towel to dry the lettuce. Chop the corn off the cob and set to the side. If adding shrimp to the salad, season with a drizzle oil, 1 tsp paprika, 1 tsp cumin, 1/2 tsp chipotle powder, and salt to taste. 
  5. Add a pan to the stove over medium heat. Once hot, add a drizzle of olive oil, then add the shrimp. Cook for about 2-3 minutes on each side. 
  6. To serve, combine the lettuce with the corn, pumpkin seeds, and dressing (if eating all at once). Top with the shrimp, and option to add 1/4 avocado to each serving.

 

This recipe is filled with healthy fats (if you use avocado oil mayo) which are perfect for your follicular phase. Instead of french fries, I'll also do a side of guac and plantain chips for a little healthier and cleaner version! If you like an even spicier salad, option to add a dash of cayenne to the chickpea croutons and/or shrimp. Option also to sub out shrimp for chicken, or double up on the chickpeas for a vegetarian salad. Enjoy! 🫶
