Miso Ginger Dumpling Soup

Heal me, soup. That's what I think when I eat this soup. I've made it like 4 times at this point this week. And it does the job every time. And yes, the "dumpling" in the picture is in fact a gyoza, but we're calling it dumpling soup because that's the vibe of the soup. This soup is amazing in either your luteal or menstrual phase, just adjust the add-ons accordingly (see below). 

 

Ingredients:

Makes one serving

  • 4 dumplings/gyoza/wontons
  • 2 c veggie, mineral or chicken broth
  • 1 c water
  • 1 green onion
  • 1-2 tsp grated ginger (depending on your preference)
  • 1 tbsp tamari
  • 1 tsp miso paste
  • salt
  • wakame seaweed (optional)

 

Directions:

  1. Add the broth, water, tamari, and a pinch of salt to a pot and bring to a boil.
  2. Once boiling, add the frozen dumplings and wakame seaweed and boil for 5 minutes.
  3. In the meantime, chop the green onion and add to a bowl along with the grated ginger.
  4. Transfer the dumplings to the bowl, then add the broth. Add your miso paste in last, and mix until everything is combined.

 

For some optional add-ons, here's what I'd recommend for your luteal phase: bok choy, white onion, garlic. For your menstrual phase: mushrooms, kale, spinach. For some extra protein, add some tofu chunks or shredded chicken. If you want a little more carb, add some noodles! Enjoy 🫶
