Heal me, soup. That's what I think when I eat this soup. I've made it like 4 times at this point this week. And it does the job every time. And yes, the "dumpling" in the picture is in fact a gyoza, but we're calling it dumpling soup because that's the vibe of the soup. This soup is amazing in either your luteal or menstrual phase, just adjust the add-ons accordingly (see below).
Ingredients:
Makes one serving
- 4 dumplings/gyoza/wontons
- 2 c veggie, mineral or chicken broth
- 1 c water
- 1 green onion
- 1-2 tsp grated ginger (depending on your preference)
- 1 tbsp tamari
- 1 tsp miso paste
- salt
- wakame seaweed (optional)
Directions:
- Add the broth, water, tamari, and a pinch of salt to a pot and bring to a boil.
- Once boiling, add the frozen dumplings and wakame seaweed and boil for 5 minutes.
- In the meantime, chop the green onion and add to a bowl along with the grated ginger.
- Transfer the dumplings to the bowl, then add the broth. Add your miso paste in last, and mix until everything is combined.
For some optional add-ons, here's what I'd recommend for your luteal phase: bok choy, white onion, garlic. For your menstrual phase: mushrooms, kale, spinach. For some extra protein, add some tofu chunks or shredded chicken. If you want a little more carb, add some noodles! Enjoy 🫶
