This is the most gentle, healing soup that takes less than 20 minutes to make. It's absolutely amazing during your period, or when your gut is acting up. I like to have this morning or night!
Ingredients:
Makes ~2 servings
- 4 c water
- 1 4x4 inch piece kombu
- 2 heaping tbsp miso paste
- handful mushrooms
- silken tofu
- 2 tbsp chopped wakame seaweed
- green onion (optional)
- splash tamari (optional)
Directions:
- Prepare your toppings. Chop tofu, green onion, and wakame. Wash and chop ends off mushrooms.
- Add your water and kombu to a pot over medium heat and simmer for 10-15 minutes. Remove the kombu and add the mushrooms. Bring the heat up to medium high and soft boil the mushrooms for 2-3 minutes.
- Add some of the broth to a separate cup along with the miso paste. Mix until miso is dissolved.
- To serve- add tofu, green onion, and wakame to your bowl. Add half the water and mushrooms. Lastly, strain about half the miso mixture into your bowl. Save the rest of the miso mixture when you’re ready to have another serving. Add a splash of tamari if desired.
If you need to make this a full meal, add a side of rice. I know this doesn't seem like it'd be the typical breakfast, but try it just once! You could add a fried egg on top of the rice to make it more breakfast-y. Enjoy 🫶
