This might be the best dessert I have ever made... And I don't take dessert lightly. This no bake cheesecake is gluten, dairy, and refined sugar free, AND it's even a biohack for your follicular phase! She's literally got it all! Feel free to make this cheesecake anytime of your cycle, but just know that you're actually supporting your hormones when you eat it during your follicular phase than if you weren't 😉
Ingredients:
Makes one small cheesecake (about 8 inches in diameter)
- 1 8 oz tub dairy free cream cheese
- 1/4 c honey or agave nectar
- juice of 1 lemon
- 1/4 c melted coconut oil
- 1 7.5 oz box gluten free graham crackers
- 4 tbsp dairy free butter
- 1 c frozen cherries
- 2 tbsp coconut sugar
- 1/2 tsp cornstarch
Directions:
- Use a food processor to pulse half the box of graham crackers into crumbs. You can also add them to a plastic bag, and smash with a rolling pin, pot, bottle of wine, etc. until they are crumbs.
- Melt your butter, and in a separate bowl add the graham crackers and butter together.
- Mix together until the crumbs start sticking together, should be the consistency of damp sand.
- Line your baking dish with parchment paper, then add the graham cracker mixture on top.
- Firmly press down on the graham crackers to evenly cover the bottom of the pan. The crust should not be crumbly or too wet.
- Let refrigerate while you make the filling.
- Allow your cream cheese to come to room temperature, or microwave in intervals of 20 seconds until it's easily mixable.
- Add your honey, the juice of 1/2 lemon, and coconut oil and mix until smooth and creamy.
- Transfer the mixture to the top of the graham cracker crust and let set for a minimum of 4 hours, preferably overnight.
- To make the cherry topping, add the cherries to a pot over medium heat.
- Once the cherries have thawed and are soft (about 5 min) start gently mashing them with a fork.
- Then, add the juice of 1/2 lemon, coconut sugar, and cornstarch.
- Bring to a hard simmer, then decrease the heat back to low.
- Let simmer for 5 minutes.
- Once the cheesecake has finished setting, add the cooled cherries to the top.
When I tell you I had to practice MAJOR self-restraint from eating the entire cheesecake at once... it's that good. You have to try this one-- follicular phase or not! Enjoyyy 🫶
