Orange Glazed Salmon Bowl

I live off of salmon bowls. Sorry, but they're just too good, and there are so many flavor combos you can do with them! I made this salmon bowl for my luteal phase, and included some debloating foods with it. And if you hate salmon, any one of my recipes could be subbed for chicken or tofu. 

 

Ingredients:

Makes about 3 servings

  • 1 c black rice (also called purple or forbidden rice. normal rice works too)
  • 3 salmon fillets
  • 1/2 English cucumber
  • 1/2 avocado
  • 1 green onion
  • 2 tbsp cilantro
  • 2 tsp grated ginger
  • juice of 1/2 lime
  • juice of 1 orange
  • 1 tsp orange zest
  • 2 tbsp coconut aminos
  • 2 tbsp ketchup
  • 1 tsp cornstarch
  • salt
  • oil

 

Directions:

  1. Make the rice as normal. 
  2. Make the cucumber salad by chopping the cucumber and avocado into small chunks, and chopping the green onion and cilantro. Combine these ingredients with the grated ginger, lime juice, and a splash of coconut aminos and set aside.
  3. Make the orange sauce by combining the orange juice, orange zest, coconut aminos, ketchup, cornstarch, and 1/4 c cold water and set aside.
  4. Cook your salmon. For the stovetop method, season your salmon generously with salt, then cook on the stove over medium heat for about 3 minutes on each side. Then, remove the salmon from the stove.
  5. Add the orange sauce to the pan and bring to a simmer stirring occasionally until the sauce thickens, about 3 minutes. Once the sauce has thickened, remove the sauce from the heat.
  6. To serve, add the black rice to your plate first, followed by the cucumber salad, salmon on top, then finish with a generous amount of orange sauce and more cilantro.

 

Black rice is amazing in this recipe since it's higher in protein than other grains. It also has a high antioxidant content, making it excellent for reducing oxidative stress before your period. Cucumber and ginger help you debloat, and avocado may also support your gut health. Enjoy! 🫶
