Orange Olive Oil Cake

Okay so if you've been watching my IG stories, you probably know I'm absolutely living for orange season right now. Oranges are in season in California, but even if you're not located in California, this olive oil cake is going to blow your mind. The idea came to me to make an orange olive oil cake since oranges are amazing in your follicular phase and olive oil cake just sounds like summer. You will love this recipe!!

 

Ingredients:

Makes 1 9 inch cake

  • 2 c all purpose flour (gluten free works- it's what I use!)
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 c sugar
  • 1 tsp almond extract
  • 3 eggs
  • 1/2 c GOOD olive oil
  • 3/4 c milk of choice (I used almond)
  • zest of 2 oranges
  • juice of 1 orange
  • powdered sugar

 

Directions:

  1. Preheat the oven to 350 degrees
  2. Combine the flour, baking soda, baking powder, and salt in a large bowl.
  3. In a separate bowl, combine the sugar, almond extract, eggs, olive oil, zest, and juice. Add this back into the large bowl with the dry ingredients and slowly whisk in the milk.
  4. Add parchment paper to the bottom of your pan and spray with cooking spray before filling with the cake batter.
  5. Bake for 45-50 minutes.
  6. Once cooled, sprinkle the top with powdered sugar.

 

It's THAT easy to make the best cake of your life. Ugh. I'm not being dramatic when I say this is literally my favorite cake I've ever made. Enjoy besties!! 🫶
