Salmon Quinoa Bowl

Salmon Quinoa Bowl

This is without a doubt the #1 meal I made while healing my gut. It was a weekly staple in the beginning and also during my anti-inflammatory and hormone disruptor free foods cleanse. It'll fill you up, but is also full of easier-on-the-gut foods so I never felt too full or got bloated.

 

Ingredients:

Makes 1 serving

  • salmon fillets
  • Trader Joe's salmon seasoning ( coconut sugar, smoked paprika, salt, pepper, thyme)
  • 1 c quinoa
  • 2 c water
  • 1/4 c avocado
  • 1/4 c Roma tomatoes
  • 1/4 c red onion
  • 1/4 c mango
  • 1/4 c English cucumber
  • spicy mayo or hot honey
  • olive oil

 

Directions:

  1. Add quinoa and water to a pot over high heat. 
  2. Bring to a boil, then decrease heat to low, cover the pot, and let simmer for 20 minutes. 
  3. Drizzle olive oil over your salmon, then season generously- about 1 tsp- with the Trader Joe's salmon seasoning or make your own.
  4. Air fry or bake at 400 for 10-12 minutes. 
  5. Chop your avocados, tomatoes, onion, mango, and cucumber into small chunks.
  6. Add your quinoa to a bowl first, followed by all the veggies, and salmon on top.
  7. Drizzle spicy mayo or hot honey over top the bowl.

 

While there are several different components to this bowl, it's extremely straightforward and simple! Double, triple, or quadruple the recipe as needed. Serve with your favorite kombucha or mocktail and that is my perfect dinner 🙂 Enjoy! 🫶
