Sesame Miso Ramen

Yay! Another ramen recipe. This was my attempt at recreating one of my favorite vegan ramen recipes of all time from the restaurant HiroNori- if you're in SoCal, their vegan ramen is a must try. Decent ramen is actually super easy to make, it's just like any soup. You throw everything into a pot and let it simmer, then throw all the toppings and fixings into a bowl! I love a good, comforting, warming soup during my menstrual phase, and this is one I think you'll LOVE!

 

Ingredients:

Makes 1 serving

  • 2 c mineral broth (this is the one I always use during my menstrual! code STACEYA10 🙂)
  • 1/2 c light coconut milk
  • 1 tbsp white miso
  • 1 tbsp coconut aminos
  • 2 tbsp tahini
  • 1 clove garlic
  • 1 tsp grated ginger
  • 1 package ramen noodles
  • 1 piece broccolini
  • 1/2 c sweet corn
  • 1 handful chopped dino kale
  • 1/2 c chopped tofu
  • soft boiled egg
  • salt
  • toasted sesame oil

 

Directions:

  1. Heat a drizzle of toasted sesame oil in a pot over medium heat. Once hot, add your broccolini, cooking for 2-3 minutes on each side. Turn off the heat, sprinkle broccolini with salt and a dash of coconut aminos, and remove broccolini.
  2. Mince garlic in the meantime, and prepare corn, tofu, and kale. Once the pot has cooled, wipe it down to remove any bits that were left over.
  3. Turn the stove back onto low and add another splash toasted sesame oil. Add the garlic and grate the ginger on top. Give it a quick 1 minute sauté.
  4. Add your mineral broth, coconut milk, coconut aminos, tahini, and miso paste. Stir until miso has dissolved. Then, increase temperature to medium low. Allow everything to gently simmer uncovered for at least 10 minutes.
  5. In the meantime, soft boil your egg (if desired). Once egg is done boiling, boil your noodles according to the package. Drain the noodles 1 minute before they're done.
  6. To assemble, add your noodles, chopped tofu, and corn first, followed by the broth, and lastly add kale, half an egg, and the broccolini on top.

 

Feel free to switch up the toppings to your liking! You can make this a spicy ramen by adding chili oil. This would also go amazing with some mushrooms, green onions, etc. And, if you want to have this ramen more than once, double the recipe and save half the broth for later. You'll have all the toppings already chopped and ready, so it's super to eat the day after! Enjoyy 🫶
