I'm all about easy, but healthy and tasty recipes, and this one really fits the brief. It's honestly super simple, but doesn't taste bland. It's perfect for the week after you come off your period (follicular phase), full of healthy fats and vegetarian protein from chickpeas.
Ingredients:
Makes ~5 servings
- 1 lb gnocchi
- 1 15 oz can chickpeas
- 1 sweet onion
- 1 c artichoke hearts
- 1/2 c pitted kalamata and/or green olives
- 1 zucchini
- 3 cloves garlic
- 1/4 c olive oil
- juice of 1/2 lemon
- salt
- pepper
- red pepper flakes
- dill
Directions:
- Preheat oven to 425 degrees.
- Chop onion and zucchini into thin slices and chop olives in half. Drain and rinse chickpeas.
- Add gnocchi, chickpeas, onion, artichoke, olives, and zucchini to a large baking sheet.
- Crush garlic into a measuring cup, add olive oil, lemon juice, a good pinch of salt and mix together. Pour over the gnocchi and mix everything with your hands.
- Add black pepper and red pepper flakes on top. Bake for 35 minutes, mixing everything halfway through.
- Top with dill to serve.
The olives and marinated artichokes give such an amazing Mediterranean flavor to this dish. You could easily add a side of chicken or fish as well. Enjoy! 🫶
