Skin Glow Soup

When I saw this recipe for this skin glow soup, I knew I wanted to make my own version. I immediately fell in love with the ingredients, not only for the skin benefits, but because it's an amazing follicular phase soup! Carrots are one of the best veggies for your follicular phase, and are also packed with vitamin A, one of the essential building blocks of good skin. 

 

Ingredients:

Makes about 6 servings

  • 8 carrots, peeled
  • 1 red bell pepper
  • 2 leeks
  • 2 cloves garlic
  • 1 tbsp fresh grated ginger
  • 1 tsp turmeric
  • dash cayenne
  • 32 oz vegetable broth (chicken broth works too)
  • 1 c coconut milk
  • olive oil
  • salt
  • pepper

 

Directions:

  1. Add a generous drizzle of olive oil to a pot over medium heat. 
  2. Wash, then chop carrots, bell pepper, and leeks and add to pot.
  3. Sauté for 10 minutes.
  4. Mince garlic and add to pot.
  5. Grate ginger over pot and stir everything together for 2-3 more minutes.
  6. Add turmeric and cayenne, and sauté for another minute.
  7. Add the vegetable stock and bring to a boil on high heat.
  8. Lower the heat back down to low, and once simmering, carefully ladle the soup into a blender.
  9. Blend the soup until smooth, then transfer back to the pot.
  10. Add coconut milk, and slat and pepper to taste.

 

I added a dollop of dairy free sour cream and cilantro to make it pretty. This soup is not too sweet, and it's got a hint of spiciness that I love! You get the vitamin A benefit from the carrots and red bell pepper. Leek contains beta carotene, which has anti-inflammatory and anti-aging benefits. Enjoy!! 🫶
